I am Research Director at New Harvest, where I help scientists develop new ways to make cultured food. I just (successfully) defended my PhD in Cell Biology at Yale University, and have studied protein structure and function, from bacterial proteins to milk proteins. Most recently I have studied how insects use their immune systems to fight disease.
